I made these at school and since then have tweaked the recipe, experimented with different nuts, seeds and dried fruits.
Here are 2 examples of my favourites, however you can choose to use any combination, just keep an eye on the weights used.
You will need:
- 100g Butter
- 4tbsp Golden Syrup (this weighs about 100g)
- 100g Granulated Sugar
- 300g Oats
- 75g Flaked Almonds
- 75g Glace or Dried Cherries
- 40g Mixed Seeds (I used a pack of mixed seeds that has sunflower, pumpkin, sesame and linseeds)
Or
- 100g Butter
- 4tbsp Golden Syrup (this weighs about 100g)
- 100g Granulated Sugar
- 300g Oats
- 150g pack of Cranberry and Macadamia mix
- 40g Mixed Seeds (I used a pack of mixed seeds that has – sunflower, pumpkin, sesame and linseeds)
Method:
- Grease and line a 20cm square tin or a rectangle tin of a similar volume.
- Pre heat the oven to 170degrees
- Melt the butter, golden syrup and sugar in a medium pan.
- Once melted add the oats, nuts, fruit, and seeds and mix well, making sure all the oats, nuts, fruit and seeds are well coated in the melted mixture.
- Pour or spoon this into your prepared tin and press down with the back of a spoon, I find a metal spoon easiest to use for this job.
- Cook for 7-10mins for a soft chewy bar or 10 – 15mins for a cruncher firmer bar.
- Allow to cool completely in the tin, turn out and cut into bars ready for eating!
