Chocolate Orange and Cranberry Tiffin

A Tiffin is very similar to a rocky road but without the marshmallows. You can add your favourite treats to a Tiffin.  I have added chocolate orange and dried cranberries to mine this time

You will need:

  • 200g Dark Chocolate
  • 120g Butter
  • 2tbsp (about 60g) Clear Honey
  • 200g Biscuits (I used digestives)
  • 120g Dried Cranberries
  • Chocolate Orange (less 8 segments for decoration) chopped

Topping and Decoration:

  • 200g Chocolate (either Dark or Milk, I used dark this time)
  • 8 Segments of Chocolate Orange (or one for each slice)

Method:

  • Put the chocolate orange in the fridge, by refrigerating these will help prevent it from melting if your chocolate is too hot.
  • Line and grease a 20cm square tin.
  • Melt the chocolate, butter and honey together in a heat proof bowl over a pan of simmering water on a low heat.
  • It is important not to heat this too high as it will melt the chocolate orange when added.
  • Once melted remove from the heat and stir until it is well blended.
  • Allow to stand and cool for at least 5mins or until the bowl is warm to touch.
  • Break the biscuits into small chunks. I break the biscuits in half then break each half into 3 pieces.
  • Chop the chocolate orange into small chunks (not forgetting to reserve 8 for the decoration).
  • Add the broken biscuits, dried cranberries and chocolate orange chucks to the melted chocolate mixture, stir until everything is well covered in the chocolate.
  • Transfer to your prepared tin, press down and try to level the top as much as possible.
  • Pop in the fridge to set for at least 30mins.

Topping and Decoration:

  • Melt the 200g of chocolate for the topping.
  • Once melted pour over the chilled Tiffin and level it.
  • Decorate with the reserved chocolate orange segments so there will be a segment in the middle of each slice.
  • Pop back in the fridge to set completely.
  • Cut in to slices.
  • I cut mine into 8 slices but you can cut yours however you wish, just make sure you reserve the correct amount of chocolate orange segments!
