
I do love my usual brownies and they are super easy to make. But i needed to up my game with regards to the super gooey brownie.
I have been busy experimenting and I think I have cracked it!
You will need:
- 180g Dark Chocolate (broken into squares)
- 200g Butter
- 1tsp Vanilla extract
- 3 Eggs
- 200g Caster Sugar
- 50g Soft Brown Sugar
- 100g Plain Flour
- 50g Cocoa Powder
- 1/2tsp baking Powder
- 160g White Chocolate Chips
Method:
- Grease and line a square 20cm tin and preheat the oven to 180 degrees
- Melt the dark chocolate and the butter together over a bain marie (heat proof bowl over a saucepan of simmering water), take care not to overheat the chocolate and butter.
- Once the butter and chocolate has melted, remove from the heat and add the vanilla extract and stir well, put to one side and allow to cool slightly.
- Meanwhile, whisk the eggs and sugars together until the sugar has dissolved in the eggs and they look thick and creamy.
- Gentle fold the chocolate mixture into the eggs and sugar making sure it is well incorporated.
- Sift in the flour, cocoa powder and baking powder and fold though to ensure there are no lumps of flour or cocoa powder.
- Fold through the white chocolate chips.
- Pour into the prepared tin and cook for 30 minutes.
- Allow to cool in the tin, before turning out.
