These are my quick ‘go to’ cookies when we are in need of a treat very quickly. Although they are chewy they also travel well and won’t crumble in lunch boxes or picnic hampers. For this reason these cookies are also our road trip treat too!

I love strawberries and they are at their best during the British summer. I do sometimes get a little carried away and buy more then we can eat in a day. Unfortunately strawberries really need to be eaten within a day or two of picking before they go a little soft. This is the time I make strawberry crumbles. These are traditional ginger biscuit commonly found in Cornwall. Fairing biscuits were made to be sold at fairs thus became known as fairings.
These biscuits are very similar to gingerbread men. They are a spicy biscuit, I have added crystallized ginger to this recipe. The crystallized ginger adds an extra chewy warmth. Continue reading “Cornish Fairings”

I made these at school and since then have tweaked the recipe, experimented with different nuts, seeds and dried fruits.
Here are 2 examples of my favourites, however you can choose to use any combination, just keep an eye on the weights used.
I wanted to make shortbread for #NationalShortbreadDay on 6th January 2018. I do make shortbread quite a lot either plain or the millionaire caramel shortbread recipes I have already done. I got this recipe out of a cartoon magazine when I was about 5 years old. My mum and I carefully wrote it out and kept the recipe safe all these years. The magazine has long since disappeared and I can’t remember which one it was, so unfortunately I can’t tag it in my blog. Little did I think I’d still be using the same recipe and have my own baking blog. But to all the children’s magazine editors and writers a big THANK YOU and keep the recipes coming, we still love them as we grow up!
