Unfortunately Brownies are really too easy to eat, and it is too easy to eat too many of them! Luckily they are really easy to make too….

There is nothing earth shatteringly different with my chocolate brownie recipe, when I looked at others before writing mine up they are all very similar. Again this is a recipe I have used for years and slightly changed it to suit our taste.

Lemon and Poppy Seed Cake

IMG_5377 (2)This lemon cake has such a lovely refreshing taste, with the addition of poppy seeds to this cake gives a great crunch to it. I have made a lemon curd to fill this cake which gives an added zing along with the lemon icing.  ‘Total lemon over load’ you may think, however it really works and we all love the texture the poppy seeds give.

Chocolate profiteroles

As with most deserts and puddings I love profiteroles, I learnt to make them when I was really young and they have become one of my quick to make deserts.  There are so many things you can put with a profiterole for example my summer berry éclairs.  These are the classic cream filled profiteroles with hot chocolate sauce.  The chocolate sauce idea was given to me by my friend’s sister it is so easy to make and will have any diner guest begging to know how you made it and your children will love you forever so long as you keep a good supply at hand! Cherry and White Chocolate Shortbread Cookies

I wanted to make shortbread for #NationalShortbreadDay on 6th January 2018. I do make shortbread quite a lot either plain or the millionaire caramel shortbread recipes I have already done.  I always like to have something in the cake tin for lunch boxes and after dinner treats, shortbread cookies are perfect for this.

Double Chocolate Mousse Cake

I wanted to create something a little different for my Grandma’s birthday cake.  Something a little different from what I usually do for birthdays and something that was a bit more challenging.

I had seen something similar in a patisserie shop window without the mirror glaze.  So I found myself taking elements from a few different cake ideas and created on this one.

Honey Cake

My mum used to make this Honey Cake when she was younger, unfortunately she lost the book when my grandparents moved house (years ago)! During a bit of a clearout she was reunited with the recipe book and quickly made a copy. Carrot Cake

There are so many different carrot cake recipes out there and I have tried a lot!  For me, some have too many nuts or none at all, some are really oily or too dry, not enough spice and flavour and just not quite right for me.  My cousin wanted carrot cake at part of her birthday cake so the challenge was set to make the best carrot cake to suit us!  Carrot cake is really easy to make and I like to think of it as one of my 5-aday.
