
I love the look of an Irish coffee, the rich dark coffee with the white cream floating on top.
I have used my ultra yummy chocolate cake as a base and tweaked it a little to make this amazing three layer cake.
The coffee quantity I have used is not over powering, if you like a stronger coffee flavour then add more coffee.
You will need:
- 115g Cocoa Powder
- 15g Instant Coffee
- 450ml Boiling Water
- 4tbsp Irish Whiskey
- 250g Butter
- 500g Soft Brown Sugar
- 4 Eggs (beaten)
- 400g Self Raising Flour (sifted)
Filling:
- 100g Cream Cheese
- 300ml Double Cream
- 50g Icing Sugar
- 2tbsp Irish Whiskey
Decoration:
- 25g White Chocolate
- 25g Dark Chocolate
Method:
- Line and grease three 18cm loose bottom tins and pre heat the oven to 180 degreesC
- Combine the cocoa powder, instant coffee, whiskey and boiling water, and stir well until there are no lumps. Allow to cool.
- Line and grease 3 x 18cm loose bottom tins.
- Cream the butter and sugar together until light and fluffy.
- Add the eggs one at a time, beat well after each addition.
- Fold the flour and cocoa mixture into the eggs and butter, adding it alternately until both have been used up and there are no white lumps of flour.
- Divide evenly between the three tins and bake for 35mins or until cooked through.
- Turn out and leave to cool completely.
Decoration:
- While the cake is cooking prepare the chocolate for the chocolate curls.
- Separately melt the chocolate and spread on to the back of a plate or dish.
- Place in the fridge until set and hardened.
- With the blade of a sharp knife held at right angles to the chocolate scrape over the chocolate towards you creating a curl of chocolate as you go.
Filling:
- Whisk together all the filling ingredients until thick and smooth.
Assembly:
- Once cool, level the top of two of the cake layers to give a flat finish to make them easier to stack and leave one with the rounded top.
- Place on of the cake layers on the cake stand or plate you are going to serve your cake on.
- Evenly spread one third of the filling over this cake then gently place the next cake layer on and spread another third of the filling over the second cake layer.
- Finish with the final cake layer (un-levelled one), rounded side up.
- Spread the filling over the top.
- Your cake now resembles a layered Irish Coffee!
- Finish with some white and dark chocolate curls.
